Homemade Train Birthday Cake

I made this Train Birthday Cake for my 2 year old son who loves trains, trucks & cars. I made it with two square sponge cakes which I iced together and then cut out the shapes.

I iced with icing made of plain icing sugar and water and colouring of red, green and yellow. It was hard to get the right consistency without it running too much. It might be better to do it with butter icing or buttercream icing. A tip I read was to ice the cake while frozen which helps to lay the icing without it sticking too much.

I used Chokky Mint biscuits for the wheels, licorice cut thinly for the windows, smarties along sides, marshmallow on top and those beaut shiny balls I always loved as a child.

My kids loved it.
