Homemade Turtle Cupcakes
These are a dozen turtle cupcakes I made for my daughter's friend, she really loves turtles and I wanted to make them extra special! The cupcakes were white cupcakes intentionally made to be healthy and low in fat and sugar so I used and egg substitute in the mix along with applesauce in place of the oil. I also used whipped icing instead of butter cream!
The turtles were made from butter cream but were removable in case they did not want to eat them. The turtles were piped on to wax paper using a fairly wide tip and then I used the narrow writing tip to finish the shell and face. I then put them in the freezer until I was ready to put them on the cupcakes. Putting them in the freezer makes them sooo much easier to transport from the wax paper to cupcakes!
Needless to say they were a big hit!!
