Homemade Winter Wonderland Cake

I made this Winter Wonderland cake for a Christmas dinner with my husband’s family. The bottom tier is two 8-inch layers of spice cake with cinnamon cream cheese filling and the top is two 6-inch layers with the same flavors.

The sides are iced in royal blue buttercream and the tops in white buttercream. I sprinkled white cake sparkles on the tops of each tier to make it look more like snow. I outlined and filled in snowbanks on the sides with white buttercream and a Wilton tip and swirled it with a knife. I piped snowflakes and snowball borders with white buttercream and a Wilton tip as well.

The snowmen and trees are all sugar cookies decorated with royal icing which I made a few days in advance. The trees on the sides of the cake are attached with buttercream. To attach the cookies to the top of the cake I “glued” lollipop sticks to them with royal icing and stuck them in the cake once the royal icing had dried.
