My daughter has a pink bunny that she carries everywhere and even sleeps with. So when it came time for her first birthday, I knew I had to make a bunny birthday cake.

This cake is two tiers (with one layer in each tier). I covered each layer with butter cream icing and then with pink rolled fondant.

I made the bunny out of gum paste. It helps to put a bit of Crisco on your hands to handle the gum paste. I made the pink bow around the bunny's neck out of the pink fondant. The eyes and nose are made out of dyed gum paste. I painted the center of the ears. I used a little butter cream icing to hold the bunny in place.

I then piped white butter cream icing around the edges of the layers. You could also roll white fondant into balls and place around the edges. The bunny was my daughter's favorite part. She loved it more than the smash cake I made her with a small bunny cake pan. (I recommend making the bunny a day or so before, it will keep well if you cover it well with Cling Wrap and place in the fridge. This will allow you to be sure you can get the bunny looking right without having to hurry.)

I baked this Homemade Easter Bunny in Basket & Cupcake Cake for my husband, who turned. Since Easter is around the corner and I just got my "Jumbo Cupcake" from a friend in the USA, I wanted to try to bake a Jumbo cupcake for my husband's birthday.

I loves to use "Betty Crocker" premix. My husband loves the premix cake. It's my 1st time baking using a Jumbo Cupcake. I used the base of the Jumbo Cupcake for a basket. The buttercream, I used vanilla buttercream as that's my husband's favorite. I used tip #47 to pipe a basketweaves around the Jumbo Cupcake base. Then I used tip #233 for the grass. As for the bunny, I melted white chocolate chips & molded into the bunny mold.

Since I had some batter left, I baked 12 standard cupcakes. To assemble the cake, I put the white chocolate Bunny in the middle of the Jumbo Cupcakes & scatter some chocolate candy as an eggs.

My husband said it's to fancy but our kids loved it. I'm so happy that I manage to make the huge Jumbo Cupcake. I'm going to make it again, this Jumbo Cupcake for the Easter Day to bring to my daughter's school to celebrate it!

My Easter Bunny Cake was made from a 6" Pyrex bowl, using a metal flower nail to help cook the middle by placing in the center of the bowl and then pouring batter around. I torted, crumb coated, and then final coat with butter cream. The head is made from 3 rice krispie treats, covered in MM fondant.

The ears were made several days in advance from gum paste. I then used lollipop sticks and attached at the back with more gum paste and glue made from gum paste and water. The ears along with the cheeks were dusted with rose colored petal dust. Eyes, nose, and mouth made from fondant. Head was too heavy to just attach with butter cream so used more sticks.

Set all on a 10 " round (not torted, did not fill but up to half was, so was thinner than most 3" cakes). Used the petal effect method on the sides (was my first time trying this). The grass was edible grass from Walmart, flowers were made from either fondant and gum paste or from royal icing.

I started taking the cake decorating classes 4 months ago, am on my final course - love it.
