Elmo Cake

Do you prefer something creative to spending money on a cute shaped pan?

FACE – 8″ round pan – 1/2 batter from mix (about 2 c.)for head.

EYES & NOSE – With rest of that batter, make mini-muffin size cupcakes for EYES (make several in case a problem occurs). Using liners will help keep them intact when removing from pan. Then, carefully peel liner off. For NOSE – pinch a point in alum. liner and fasten with staple or paper clip. Some extra hand shaping and experimenting with several is recommended. These can be baked in reg. cupcake pan.

For base, split another mix between 2 9×13″ pans, plus the leftover batter from the first mix for head, eyes, nose.

BASE – place one 9×13 on plate, frost top and add 2nd layer, then frost the sides – I used my favorite chocolate frosting. The TOP was hand dyed blue using canned frosting (cream cheese) to match the background of an Elmo Runner from cotton print from fabric store. Spread blue on top, making clean edges. Immediately, place M&M’s in “rainbow order” at base and top edge.

Place round on top – I put mine off-center to allow ‘name room.’ Mark MOUTH with toothpick (I had cut a pattern)and fill in with chocolate frosting (I don’t like taste of BLACK).

FUR is 2 – 6oz. bags of RED decorating icing squished through tip that makes ‘flowers/stars’.

EYES are the mini-cupcakes trimmed at bottom to slope forward, covered in canned white, with brown M&M irises.

NOSE is hand-dyed Canned white (about 1 drop red, 3 drops yellow). I cut off most of bottom to make correct depth.

Add candle and NAME (chocolate) and we’re ready to celebrate our 1 year old grandson’s Birthday!
