Fairy Castle Cake

I got inspiration for this cake from your fantastic website :) It was my first attempt at a 2 tier cake so wanted to stick with something fairly simple. The cake is made up of two rounds – 8″ and 6″ Madeira cake, split in two and filled with jam and buttercream. The bottom tier needs to be extra deep. I iced them both individually using white fondant icing and iced the top tier on a thin cake board.

I then put the smaller tier on the large tier and piped around the base of the top tier using pink icing. I used different coloured icing to pipe on windows and a door, added sugar ball door handles and piped on flower stems and added ready made sugar flowers. I then used coloured mini marshmallows for turrets glued on with edible glue and topped it with a numbered candle. I made a path around the castle by icing the board, spreading on edible glue and sticking on hundreds and thousands. As a finishing touch I added a couple of licorice allsorts beside the door and sprinkled the top of the cake with edible glitter.

It’s not the most perfect cake ever but my little girl loved it and the look on her face made it all worthwhile!
