I made this cake for my manager's 11 yr old daughter's birthday party. She told me she wanted hearts and roses. The heart part was easy but I never was very good at roses. Anyway, she wanted a spice cake with cream cheese frosting. I had only decorated with butter cream frosting so what I did was made the flowers ahead of time with butter cream and froze them, then refrigerated the rest of the red icing for the trim. I found a recipe for a moist spice cake off a wonderful site, "Wiltons.com" the discussion forum, wedding cake section. I used Betty Crocker spice cake mix, (3 boxes-2 and doubled the recipe the first batch for the 12" & 6" heart pan, and 1 box for the 8" heart pan.) With the remaining batter make cupcakes.
Moist Spice Cake
1 box spice cake
1 cup butter milk (I just used milk w/1 Tbsp white vinegar)
1/3 cup sweetened applesauce
1/3 cup veg oil
3 lg eggs
1/4 tsp ground cinnamon
Throw it all in a bowl, mix on low til blended them beat on med for 2 min. Bake acc to the pan or box instruc. Very good!
