I decided to make this cake for my daughters first birthday. We have this ongoing hello kitty theme in all her nursery decor, toys, clothes etc so OF COURSE her birthday cake had to be hello kitty.
I used two 9×13 cakes, and for the filling I went to the bulk food store and bought some lemon pie filling which worked perfectly and tasted even better. I frosted the cake with buttercream icing, trying my best to get it smooth. (a trick i learned is to go back after the icing starts to crust a little and use parchment paper to gently smooth out any bumps and imperfections. I actually broke my cake when i was layering it so it’s not the straightest ever but it did the job :p
for the dots and the hello kitty I used colourflow icing. I prepared them about 3 days beforehand to make sure they’d be ready in time.
the eyes, nose and whiskers on kitty are made from ju jubes that i rolled into the shapes i wanted, then rolled in sugar and painted with some food colouring to enhance the colour. I stuck them on with royal icing and voila! hello kitty cake!
