Homemade Bailey’s Garden Doll Cake

I created this cake for my wonderful niece, Bailey. Bailey is a very special 20 yr old with Downs Syndrome who has a style all her own and she LOVES fairies and neon colors. I found the doll after hearing that Bailey was getting her own hair cut and streaked hot pink! The doll had long hair, so I cut it to match Bailey’s bob-cut.

All cake is basic yellow cake. The base was made with an angelfood cake pan and 2-9″ rounds were used layered on the top. I made “decorator” frosting and the colors were achieved by using basic paste colors for depth and adding the neon gel colors for brightness.

I kept the application of icing thin, simply because Bailey is not big on sweets.

Day one, I baked the cakes. Day 2, I layered the cakes using white icing for layering and as a “primer” coat after cutting the dress to shape. Day 3, I made the “Toadstool” cupcakes, colored all the icing and put it all together.

I used a spreader knife dipped in warm water to smooth the skirt and gave it a “satin” shimmer. Colored sugar was used to give the toadstools and top of skirt a shimmer.

The “toadstools” came in as a second thought because of the amount of guests attending the party and they can also be used for “take-home” cake for family members who are unable to attend.

To keep with the Fairy theme, I purchased the “Twinkle” candles!

This was my first doll cake! :o)
