SAVANNAH'S DOLPHIN CAKE We planned our annual (extended) family vacation last summer at the end of June, which would include our daughter Savannah's 10th birthday. Normally we travel to Islamorada, in the Florida Keys the first or second week. We decided to give her a "swim with the dolphins" experience as her big birthday present, and celebrate there while on vacation. When we arrived back home, she could have her first slumber party. I've been a stay-at-home mom for the past 1 1/2 years, and try to be creative for hers and her brother Collin's birthday parties and cakes.
I finally decided on making a dolphin cake for the birthday cake at her sleepover. Of course, waiting until the last minute, I soon realized I was not able to walk into any store in my town in Missouri, and purchase a dolphin-shaped cake pan. I googled all different ideas to make her cake, and combined a few ideas creating a rice-crispy cake. I am definitely not very artistic, so I was proud when shaping the warm, blue rice-crispy treat that was actually looking like a dolphin. I came up with the idea of using yellow rubber kitchen-type gloves,as those crispy treats are so sticky ! Then spraying them with pam to do the shaping . Everytime I stepped back to look at it, it seemed I was always reshaping different parts. I would say it took me about 45 minutes to stir up the mixture and shape it. After it dried a bit, I then put the icing final touches on it. When shaping it, I had placed foil around a large baking stone. Then, I used a rubber spatula and created waves under the dolphin to the base of the stone. I had made a huge batch of turquoise/blue icing for both the dolphin and waves. The bottom 2 inches or so I sprinkled graham cracker crumbs to look like sand. Next, I baked a batch of cupcakes, using her fave color of hot pink and zebra stripe cupcake holders. I iced them with the same turquoise icing, and spelled out "happy 10th Savannah" on the cupcakes. She was extremely excited and could not believe it was rice-crispys !! I was extremely pleased at the outcome as I pretty much winged it the entire way.
