Homemade Dr. Seuss cake

As the child of two teachers, reading has always been important to me. For Read Across America Day (aka Dr. Seuss’s birthday) I made these cakes for my mom’s 4th grade class (my daughter is now in middle school and wasn’t interested in something this year!)

The Cat in the Hat hat was made of 8 inch round cakes in white cake and red velvet cake with cream cheese frosting. The red didn’t turn out as red as I would have liked without getting that food dye taste so I added some red sugar to the top of the cake. Next time I’d add some support dowels or rods to it because it definitely started to sag.

Thing 1 & 2 are cupcakes with blue dyed icing and blue cotton candy on top. The Sneeches cupcakes are yellow dyed icing with green stars for those with and none for those without.

The ham is a green dyed white cake (the cake is green as well) made in a loaf pan and carved. A little black icing for that Dr. Seuss cartoon look and a half of a marshmallow for the bone. The eggs are made of melted candy melt in white and green.

Finally, the fish are just Swedish fish and blue gummy sharks. I put it all together on 2 foam boards taped together and added a happy birthday sign and a Read Across America poem. I’m definitely no expert at this but it was fun to make and the kids loved it.
