Homemade In the Night Garden Cake

My daughter is a massive In the Night Garden fan, so it had to be done. I did cheat a bit by purchasing the rice paper topper from Ebay, but the rest of the cake is totally home made!

Inside are three layers of chocolate sponge (six eggs, 12 oz of margarine, caster sugar and self raising flour), sandwiched together with chocolate butter icing and then chilled.

I then made the green icing using green food colouring mixed into regal icing and rolled it out over the cake (it took a number of attempts before the icing didnt rip or collapse when I put it on) – cornflour on the board is helpful to make sure it doesn’t stick to the board.

I then smoothed it down and used a plastic paddle to create the flat sides and top. I stuck the rice paper topper onto the cake using a v thin layer of butter cream. I created the “flowers” using balls of different coloured regal icing and cookie cutters to put them round the outside of the cake.

Lets just hope she enjoys it tomorrow….
