Beautiful Homemade Princess Castle Birthday Cake

For my daughter’s 5th birthday, she asked me to make a princess castle cake…this was a HUGE task, particularly since I have never made a cake before (usually I purchase them from my friend who owns a bakery and is very talented & trained). After doing some research and looking at different photos online, I was able to tackle this cake, and although I did not sleep much the week of her party, it was definitely worth it! Since this was my first time using fondant, I probably wasted more than I actually used, but at least now I know what I need/don’t need.

The cake turned out delicious…chocolate cake with white chocolate mousse filling and chocolate ganache and the Satin Ice fondant was definitely the way to go…it was easy to work with and tasted surprisingly good! The towers were made from paper towel rolls (only non-edible pieces on the cake) and ice cream cones and the bushes were made from rice crispy treats & covered in fondant. It was a hit with the children and although at 4am on the day of her party when I was still working away, I did not think I would ever do another cake, I of course changed my mind when I saw how excited my daughter was when she saw the finished product and I am quite certain I will be doing another cake for her next birthday! I also made some chocolate and strawberry cupcakes, using vanilla buttercream frosting and fondant decorations.
