Homemade Princess Castle Cake

I have a pair of boy/girl twins and I try to always make them their own birthday cake. This year, for their 4th birthday, we did a theme of Pirates and Princesses. This is the castle cake that I made for her.

The cake recipe is an eggless, dairy-free chocolate recipe that I got years ago from a friend. I browsed on coolest-birthday-cakes.com for inspiration – you always have the best cakes!

Mine is 2 8-inch round cakes. To give this simple cake a castle look I frosted some sugar cones. To get some elevation to the middle sphere I had to improvise! I ended up using the last 2 graham crackers in the house. I broke them into quarter pieces to make a stack of 8, sticking them together with a thin layer of frosting, and braced with some carefully placed toothpicks.

The frosting is homemade butter cream, colored using Wilton colors. It was a very big hit!
