Coolest Horrible History Birthday Cake

I have three little sisters that I love like grandchildren! Every year since birth, I have made their birthday cakes for them and they choose the topic for their cakes. Emma, the middle of the three girls is mad about “Horrible Histories” and decided this was to be the topic for her 8th birthday cake. I began by making a basic victory sandwitch – equal weight of eggs, butter (softened), caster sugar and self raising flour (I weighed 4 eggs and used the equivilent amount of the other ingredients). I put all ingredients in together with a teaspoon of vanilla essence and a teaspoon of baking powder and beat it until smoothly mixed (don’t overbeat or the cake will be tough). I greased the sides and lined the bottom of a 9″ tin and baked it in a 190 degree pre-heated oven for approximately 30 minutes (on untill done). Turn out carefull and leave untll absolutely cold. I sliced through and filled it with raspberry jam and butter cream then covered it with white fondant icing. I piped “Horrible Histories” along the top, made a coffin from another small piece of sponge and covered that in orange fondant icing (to look like wood), piped “RIP” on the top of the coffin and “The Black Death” along the bottom of cake all in black butter cream, then “rosettes” also in black around the base of the cake. I finished it off by decorating the cake and coffin with rats made from chocolate fondant icing and adding “Happy Birthday” candles. Emma was over the moon!!
