Luau cake
This is a two tiered cake using a regular circle cake pan and an oval cake pan that I acquired in the Wilton Cake Decorating II class. The cake was from a regular mix, but I did use an egg replacement as we have allergies in the family. The main frosting used is decorating frosting (using the Wilton recipe) with soy margarine instead of the butter and butter extract added for better flavor. It was tinted an aqua color. The waves were blue and white frosting loosely mixed together with Wilton's blue color mist on the 'waves' to give a more realistic look.
The flowers were made of fondant and were my attempt at hibiscus flowers. They were made with tinted fondant sculpted like playdoh and I used Wilton's pink color mist on some of the petal edges.
The shells were an experiment. I made my own version of royal icing (basically powdered sugar and water) since I couldn't use eggs. I used a candy mold and put the mixture into the molds several days in advance to harden. After I took them out of the mold, they required an additional day of drying time. I used clear vanilla extract and Wilton's tint colors in a peach and ivory to brush on color to the shells to make them appear a pinkish color.
Demera sugar was used for the "sand". A Kelly doll (we already had the grass skirt for another Barbie) and a plastic coconut tree purchased at a craft shop were the toppers. The 'Happy Birthday Sophia' was a strip of white fondant cut with a pastry cutter (to give the decorative edge) and pink buttercream frosting writing.
