Mocha Polka Date Cake
This cake can be made with any flavor sponge and any flavor buttercream, because, after all - it is just about the polka dots. My friend loves chocolate and coffee, so when his wife asked me to make her husband's birthday cake it was obvious to me.
The cake and buttercream were both made from scratch, but you could absolutely use a box mix and already made frosting, however, I always prefer scratch. When I made the buttercream, I separated it into two batches. Half was flavored with mocha paste (which gave it a slight brown color), which I used for the filling. The balance I used for the outer coating.
The dots were simply the candy coating pellets that you buy in the craft store. I melted each, used a pastry bag with the tiniest tip to pipe the dots onto parchment. Do one color at a time, and make them all different sizes.
Once you ice the cake, while the buttercream is still soft, put the dots all over the cake. Pop into the fridge and the dots will adhere to the cake and you're all set.
