Princess/Barbie Birthday cake

While discussing birthday cakes with my sister-in-law’s I remembered seeing this type of a cake on this website. We thought this would be the perfect type of cake for the two girls birthday party–both love dolls.

I started out with the purple cake first. I initially baked a homemade cake for the dome, but then couldn’t figure out how they made the cake so tall. That’s when I found out how to do it on Betty Crocker’s website. I realized I had added too much batter to the first dome cake, so it ended up being pretty dense.

For the rest of the cake I bought a white cake mix which I tinted purple (my daughter’s favorite color). I made two 8″ cakes. For the pink (my niece’s favorite color) cake I bought two straweberry cake mixes. I followed the instructions from the Betty Crocker website- 3 1/2 cups of mix into a 1 1/2 qt. glass bowl and 2 1/2 cups into 8″ pans. Bake for 35 and 30 minutes respectively.

I then turned the cakes out and let them cool completely. I cut a circle (about 2″ in diamter) out of each layer and cut the dome cake in half and placed all four layers one on top of the other (with wax paper inbetweeen) on the cake platter. I then placed them in the freezer. This makes it a ton easier to frost the crumb coating.

I made the frosting from scratch, using Wilton’s recipe. I like it much better when I mix the shortening and margarine together. Since I was coloring the frosting it didn’t matter that it wasn’t pure white.

I used Wilton’s red red, and royal blue to make purple. It turned out a lot darker than I thought, which just meant that I had to frost the Barbie’s bodice. Next time I would use either a Wilton purple or use the liquid food dye to get a lighter shade of purple.

I then crumb coated it (since I was planning on swirling the top layer I didn’t worry about making sure that the crumb coating was smooth.) After crumb coating, I put it back in the freezer for at least 45 minutes. This made it a LOT easier to frost without having the crumbs on the top layer.

I frosted the cake and put Saran Wrap around the bottom of the doll. I placed the doll in the hole and had to add some more frosting on the top to cover the hips of the doll. Because both frostings were darker than the dolls’ bodice, I ended up frosting those too. We had origianlly bought the Barbie ballerina dolls in the girls’ favorite colors thinking we wouldn’t have to frost the top.

The girls loved their cakes! My niece said it was the best birthday ever! :)
