The Little Mermaid Cake

by Vanessa Busch
(Angleton, Texas USA)

This was for my daughters 5th birthday. She was into princesses and said she wanted an Ariel cake, so I made this one. It is a layered cake with store bought white whipped icing divided and mixed with food coloring to make each color. It was a little difficult to find the exact colors I wanted, but I was happy with the end results. I did the main icing first, let it set in the refrigerator and then did the border, let it set, and so on.It was easier to work with so the colors wouldnt run. I used a star tip for the border and the seaweed. I purchased the toy and the bracelet at the store and added them to the cake when I was done icing it. It was fun to make and she loved it!!
