Coolest Ariel Mermaid Homemade Birthday Cake

My daughter found a picture of a cake online I used as a model for my Homemade Ariel Mermaid Homemade Birthday Cake. She said, I think you should make this for Leah’s 6th birthday. Leah, my granddaughter, has long, red hair that reaches past her waist. That cake was made with fondant. I totally revamped it.

I made 3 layers of pound cake and cut one in half. I iced a double layer together (making a pineapple filling for the center) and then sticking a 1/4 ” dowel rod into the double layer. I marked it and cut out 5 pieces of the dowel of same size placing them sporadically in the half side of the cake that was going to support the top ‘cliff/waterfall,’ I then placed the double stacked layer that had been cut in half on top of the cake on the side with the dowel rods.

Now, with the cake assembled I iced with Swiss buttercream and piped with a Wilton recipe buttercream that is better for piping. The two icings compliment each other. I bought the Ariel online (same as the model) and the water is made with clear blue wilton gel with glitter in it. FIrst time I tried that and it worked! The sea creatures? I found foam stickers at a craft store.
