Coolest Armadillo Cake

I made this Armadilo cake as a groom’s cake for my brother’s wedding. We are from Texas originally and I thought this would be fun. I did not make it a red velvet cake, as there were small children at the wedding and I did not think that they would understand.

I first made two chocolate sheet cakes; using cookie sheets with sides. Then photo copied to size a cartoon armadillo that I liked. I placed the cut out picture on the sheet cakes and cut out around the picture to get the basic form. I then filled the two sheet forms with icing and was now ready for decorating the outside.

I first iced the entire cake in grey icing and then dyed my fondant the same color. I used a small circle cookie cutter to make the tiles for the shell of the armadillo. I actually bent the cutter a little to make it slightly oval. I then rolled out equal portions of fondant to make the ropes for the center section of shell. Then placed the fondant on the cake where the picture required.

Two days prior I had molded fondant to make the claws and ears. Both of which were positioned on toothpicks for easy assembly. I used a giant black jelly bean for the eye. I assembled all of this the day before and let it sit overnight in the refrigerator. I would not recommend placing fondant in the refrigerator any longer than overnight while touching icing. It melts.

This was a lot of fun for me and my brother and his new wife loved the cake!
