A friend asked me to make a baby shower cake, her only re-mit was that it had to be blue and white. I used a basic Victoria sponge which I filled with lemon butter cream made with lemon curd. This gives a nice creamy texture which is ideal for spreading.
I then covered it with rolled out fondant icing. The train and teddy where made from fondant icing which I colored myself. My friend was delighted with the result.
