Coolest First Birthday Train Cake

I made this First Birthday Train Cake for my son’s first birthday. It is made of carrot cake with cream cheese frosting. The frosting was a little messy but worked well when refrigerated before frosting. I used gel color to die the frosting the various colors for the engine and cars, except the “animal car” which I left without food coloring for my son’s first piece of cake. I used mini loaf pans for the cars, large loaf pans for the engine and caboose. I also baked the round portion of the engine in a small size canning jar.

The smoke stack is a marshmallow with popcorn and on a wire. The light on the front of the engine and windows were made out of the inside of the Newman’s Own cookies used as wheels. I used pumpkin candies, animal crackers, and pretzel rods for logs in the cars. The railroad was Keebler fudge sticks and grape nuts cereal for gravel, an idea from another cake on this site.

It took a while to bake/cut all of the different shapes but it was well worth it- everyone enjoyed a fun cake for a great first birthday!
