Coolest Hello Kitty Cake 124

I set out to make this Hello Kitty Cake for my sister-in-law’s baby shower, not sure exactly what I would end up with. I printed a large picture which I place on the cake with toothpicks and carved around it with a thin knife.

I made the mistake (which I won’t do again) of using a super moist double fudge cake mix ( she really wanted chocolate!) and ended up having to do 2 crumb coats. Getting the buttercream frosting smooth was probably the biggest challenge. I smoothed it out some with waxed paper and warmed the remaining icing and poured it over the top kind of like a glaze. It may not be something that everyone recommends but, for me, it really worked and I would definitely do that again.

For the eyes I used black jelly beans, yellow for the nose, and I “glued” on pipe cleaner whiskers with more icing (didn’t care for the look of licorice). Everyone thought it looked great and my sister-in-law LOVED it!
