Coolest Hello Kitty Cake

This Hello Kitty cake was made for a co-worker by request. It is my third fondant cake and I am becoming less and less intimidated by fondant.

It was a very simple cake to make. I decided at the last minute to make it square to match the napkins. Didn’t have a square cake pan, so I made two 13 x 9 cakes and cut them into 8 1/2 x 8 1/2 squares and stacked them. The icing was cream cheese – by request – or I would have used buttercream. I then just covered it in marshmallow fondant and tinted the remainder of the fondant in colors of the napkins. Butterflies and flowers made with cutters; I printed Kitty’s face for a pattern, and cut it out with an exacto knife.

The only thing I did not like about doing this cake was that the cream cheese icing needs to stay refrigerated, so I had to wait until the very last minute to apply the fondant and decorations. Otherwise, a very easy and my co-worker was pleased.
