Coolest Hello Kitty Cake

I have a great 12×16″ cake pan that I use for all of my kids’ birthday cakes. To make the Hello Kitty cake, we printed out a picture from the web and enlarged it so it was 11.5″ high. We cut it out and traced it onto chocolate cake (from a box) with a knife to get the shape.

We did a thin crumb coat first with homemade cream cheese icing (this seals the crumbs inside so they don’t mix in with the icing later), then put it in the fridge to chill. After 30 mins, we iced the entire thing. We used red and blue gel food coloring to make the pink for the bow, and then a tube of Wilton Black Decorating Icing from the grocery store to line the bow and draw the eyes.

The nose is a gummy peach, and the whiskers are pretzel sticks covered with icing. It came out even better than I’d hoped, and everyone was surprised to find out we made it ourselves!
