Coolest Lamb Cake

For my daughter’s 2nd birthday, we were doing an animal theme and I wanted to make her a lamb cake. I baked the cake using 2 – 8 in. round cake pans, which I greased and flowered for easy removal, the day before her party. Level each layer by cutting off the rounded tops and keep to use for the face.

I used a Cool Whip frosting to decorate the cake:

1 pkg. vanilla pudding mix

1/4 c. powdered sugar

1 c. cold milk

8 oz. Cool Whip, thawed

Beat together the first 3 ingredients for 1 min. Fold in Cool Whip and decorate!

After you have the cake covered, tap all over the frosting with a spatula to give it the fluffy look.

Cut a portion of the reserved cake top for the face and position it in place. I used a box mix of fudge icing to ice, and made icing ears. I placed a dollop of the Cool Whip frosting as the eyes and a touch of fudge for the centers, and Cool Whip frosting as the nose and mouth. The legs where Keebler cookie sticks.

You will need to keep this cake refrigerated since it is decorated with Cool Whip frosting, or at least out of the heat until party time.

My daughter loved her ‘yamb’ cake! And it was very simple to make!
