Coolest Lightning McQueen Cake

My son is an avid Cars fan and just loves cars of any kind. For his third birthday we decided that nothing would be better than a Lightning Mcqueen cake. I have always made my children’s birthday cakes, but I have never done a three dimensional cake before.

With much fear and a little prayer I started my adventure! I started with a boxed cake mix and a 12×16 inch cake pan. I cut the cake in half and stacked them up and then started carving. I had my son’s toy car next to me as I carved and I just took off whatever didn’t look like Lightning.

Finally it looked right and I covered it with a layer of store bought frosting to smooth out the edges. I then used the Marshmallow Fondant recipe to make my fondant. My biggest tip here is to color it as you are making it and to definitely use your Kitchen Aide! Also you have to use the Wilton coloring as normal food coloring will just make your fondant mushy.

I used rice crispy treats to make the wheels and just covered them with the fondant as well. My son came in and saw the car with the face on and said “There is my Lightning!” He was pleased and all in all it way a great experience.
