Coolest Lobster Pot Cake

My daughter Aallee and I plan her birthday parties months in advance. This year she decided on a Low Country Shrimp Boil (with a few crawfish thrown in for color). It’s a mature theme for an 11 year old, but I thought, what the heck! Her cakes are always homemade and originality like this can’t be found at the grocery store. So, I made her a lobster pot cake. Here’s how I did it:

It’s five layers of pound cake in 9 inch rounds. Lemon filling between rounds. I crumb coated it with buttercream so the fondant would have something to stick to. I covered the cake in fondant and painted it with two different colors of silver luster dust and two tablespoons vodka (this makes a nice “paint”). The handles and corn cob are made from fondant. The crawfish are white chocolate with red luster dust. The corn cob looked very real. I rolled scraps of fondant into the shape of a cob and then took the tip of a straw to make the kernels. I then used a bright canary yellow luster dust to cover it.

I hollowed out the first two layers of cake to fit a plastic container that held the dry ice and water. When the dry ice was added to the warm water, it “steamed” and sounded like the water was actually boiling! What a fun cake and everyone really liked it. It even tasted good!
