Coolest Mario Kart Birthday Cake

For my son’s 8th Birthday this year he wanted a Mario cake. So I searched all over the internet at all the different styles of Mario cakes out there. Typically, I stick with buttercream ( because I heard how fondant didn’t taste very good) but all the Mario cakes seemed to be fondant based. So I researched how to make fondant and discovered the easier version ( and less expensive) marshmallow fondant.

The Homemade Mario Kart Birthday Cake is a whopping 2 feet long. It took 4 cakes -12 inch round cake pans each. I even had to double up on the cake mix to make each cake big enough. So that’s really 8 mixes of cake in that cake. A LOT of buttercream frosting and all the characters, minus the Mario kart vehicles, are fondant created.

Since I had never used fondant before I spent a lot of time on youtube learning the different techniques and had to throw away a batch of original fondant characters before really getting the hang of molding each one.

I actually had no intention of making the rest of the cake grass, but it looked so plain without it. So to recap, cake is buttercream but the road and figures are fondant.

This cake took a whole month to plan and an entire week to make. But since that birthday I have not been able to stop making unique cakes like this one. It’s my new favorite past time.

  1. your cake is very nice…hope you don’y mind if i copy some details to make one myself for my son’s 8′ birthday that will be next month!!!! i live in italy…think i’ll have to make lot’s of things from scratch….
