Coolest Mermaid Cake

This Mermaid Cake was a birthday cake for a five year old girl who loves the Barbie Mermaid’s Tale.

I just made a plain all-in-one sponge cake with jam and butter-cream in 10″ round tin and used a pudding basin for the rock. I covered the cakes in blue fondant icing to represent the sea, carrying it onto the cake board and brown to represent a rock with smaller rocks made from icing.

All the shells and sea life were also made from fondant (I can’t seem to get on with gum paste). The demerara sugar represents the sand which I secured to the cake board with egg white.

The doll was wrapped in cling film and stood upright in the cake. I did it this way so the doll can still be played with after the cake has been eaten. The mermaid’s tail was a basic shape made from fondant and overlaid with scales to give a 3D effect. When I colored the fondant for the scales I made sure that it didn’t mix in fully so that it left a mottled effect. This gave the tail the feel of fluidity.

I washed the cake with vodka to get rid of any icing sugar and give it a shine.

Kelice loved the cake and kept dragging guests over to show them her cake.
