Coolest Mermaid Cake

For my daugter’s 5th birthday I made a mermaid cake based on other suggestions on this website.

I used a plain cake recipe in a Dolly Vardon tin for the main part of the cake. The cake was covered in a pink butter icing. Making a small hole in the top of the cake I pushed the Barbie doll into it. Select a Barbie doll with removable legs then there is no need to hollow out the cake. I used plain white fondant to make the shape of the mermaids tail and then pressed it against the cake.

I then used small balls of coloured fondant to make the scales. I found rolling a small amount of fondant into a ball and then squashing it flat with my finger worked best. This was by far the most time consuming part of the cake.

I then piped a blue butter icing around the base and up the cake to give the feeling of water. My daughter suggested putting real shells around the base too which was easy and fun.
