Coolest Princess Genevieve Birthday Cake

This was a Princess Genevieve birthday cake for my daughter’s 5th birthday.

For the cake I used a glass Anchor hocking medium sized bowl. I used 1.5 box cakes and added 2 extra eggs to increase the firmness. I made the top of the dress from colored fondant. The bodice was a rectangle piece of pink fondant and I attached it to the Barbie using buttercream.

I used a toothpick and yellow food color to make the detail and then made the roses and leaves and attached them using water. The sleeves and neck detail were also fondant which I made with round fondant icing tools and attached with water. Once I finished the top of the dress I let her dry overnight.

I cut a 1.5 inch oval in the top of the cooled bowl cake and inserted the Barbie with the top of the dress on. I then iced the bottom of the dress with butter cream icing ( the recipe is on wilton.com). I used light pink and then put a bit of darker pink just on the top half and smeared it downward with a cake spatula. I then used the back of a butter knife dipped in water to make the line on the bottom of the dress.

I used a round cookie cutter to make the top bustle of the skirt with dark pink fondant and attached it with water to the top of the dress and then piped gold icing around the edges of that and bottom of the dress. I bought some edible glitter dust in pink and gold and sprinkled it on the dress and also gave barbie some nice eye shadow ( a little dab of moisture makes it stick).

It was a fun to make and her smile that day made every bit of effort worth it.
