Coolest Princess Party Castle Cake

The week before the party I baked three 11″x15″ Funfetti Cakes. Let them sit overnight to cool and settle. The next day I stacked the bottom layer with 2 of the cakes, I then cut the 3rd cake in half then trimmed the sides to make two 7.5″ squares, then layered them with butter cream.

I put on the crumb-coat, let it crust, then wrapped in saran wrap and froze. Two days before the party I took them out to thaw, leaving the saran wrap on. I placed dowel rods in the bottom layer and stacked the small one on top. I coated the whole cake in butter cream frosting and using a Viva paper towel smoothed the cake to look like fondant (method found on www.cakecentral.com).

For the turrets, I found colored ice cream cones, so I stacked them end to end using extra butter cream frosting to glue them together. I also stuck a toothpick through the bottoms to secure. I took a sugar cone and rolled it in melted white-chocolate tinted pink, then added the pink sprinkles. The sugar cones fit perfectly inverted in the “tower” ice cream cones.

I used pink star bursts for the castle wall tops, and warmed tootsie roll molded into a door. The tiara on top, was just a plastic costume tiara stuck on top.
