Coolest Strawberry Shortcake Hat Birthday Cake

I wanted a cake that made a statement without being too difficult to make. This Strawberry Shortcake Hat Birthday Cake was so quick and easy to make – anybody can do it. It fitted in perfectly with my daughter’s “strawberry shortcake theme”.

I bought 2 cake mixes (I used vanilla) and used 1 large round baking tin for the hat brim. For the smaller part of the hat I used about 1/2 of the cake mix and poured the mixture into a dome shaped oven proof bowl. I baked the cakes as per packet mix (the smaller one I had to cook for quite a long time) and then I left them to cool.

After letting the cakes cool I wrapped the cakes in foil & froze them overnight. The next morning I cut the dome shaped cake so the base would be level when it was turned upside down. I iced the cakes whilst they were frozen (it was easier and there were no crumbs). The icing was pre-made from the baking section of the supermarket and I just mixed in red food colouring. I used a knife dipped in hot water and smoothed on the icing. I decorated the cakes on a cake stand which completed the look.

Lastly, I added strawberry lollies (found in various supermarkets), the ribbon and bow. The fake strawberry was from my daughter’s play food set and I attached this to the cake with icing.

Everybody loved the cake and there was more than enough left over for second helpings.
