Coolest Sushi Cupcakes

I made these sushi cupcakes for a friend of mine who is a sushi fanatic. I got the idea from this site as well as a few other recipe sites.

I actually just used a french vanilla box cake mix and divided the batter into both mini cupcake pans as well as mini loaf pans. I mixed coconut into already prepared white icing for the “rice” effect. I used FruitaBu (organic smooshed fruit) for the seaweed rolls. I’m sure any fruit roll-up type food would work. I liked the brownish-purplish color of this brand.

For the toppings I used sprinkles, jelly beans, cut-up Swedish fish, flattened jellied fruit, and craisins. I used dried mango for the ginger, and tinted icing for the wasabi. I then put everything in actual sushi containers and presented it with chop sticks.

The project ended up being quite easy and fun. I love how you can experiment with different toppings for different effects. I will definitely be making these again sometime.
