Coolest Topsy Turvy Birthday Cake

This is a 3 tiered birthday cake. The middle layer is chocolate and the other two are white. I used 8/6/4 inch round pans. It is completely buttercream frosting instead of fondant.

I took a square cookie cutter and made an imprint on the bottom to make sure all the diamonds were the same size before I filled them in with frosting. I also made the topper from beads and jewelry wire and cut out the ribbon from cardboard.

  1. I am happy to see someone else who used buttercream for there Topsy cake. I just made one yesterday with buttercream. It doesn’t look as finished as fondant but tastes so much better :). I think you did a GREAT job! Thanks for the idea on the diamond cookie cutter! That will help me out! Good work

  2. if your worried about losing taste by using fondant try this next time you want to make a cake melt half a bag of mini marshmallows with about a tbsp of water and stir in half a bag of powdered sugar(if you want it colored put your color in before the sugar) and stir until you cant stir it anymore then you can use your hands to mold it and roll it out just like regular fondant except it tastes like marshmallows my kids love it.
