Coolest Train Cake

I made this train cake for my son’s 4th Birthday. The idea was taken from a Disney website. I baked 5 mini chocolate loaves using tins purchased from Lakeland. I then chopped up one of the cakes to add extra bits to the remaining 4 loaves. I made up a batch of buttercream (500g icing sugar and 250g butter + 1tsp vanilla extract – all whizzed up in the food processor) and used some of this to ‘glue’ the pieces together and coat each cake in a ‘crumb layer’. The cakes were then placed in the fridge overnight, ready for decorating the next day.

I then divided the remaining buttercream into four bowls and added food colouring paste to get the individual colours. I opted to pipe the buttercream onto the cakes, as I felt this gave a neater finish. Oreo biscuits were used for the wheels, a sprinkle coated marshmallow for the chimney, popcorn threaded onto wire for the smoke. Sweeties on the top and some sugarpaste discs on the front and back of the train to write on.

I’d experimented with sugarpaste a few days before, and made the trees, caterpillars and flowers – and also a little bumble bee. These we dotted round the cake board. If I’d had more time, I had intended to cover the cake board in green icing, textured to look like grass – and also planned to do a train track too – however, time was against us!

My son lOVED the finished result though – and I’m really pleased with how it turned out. A relatively simple cake to make, but do allow a couple of hours to decorate it!!
