Coolest Train Mountain Cake

I made this Train Mountain Cake for my son’s 3rd birthday. I used 2 boxes of chocolate cake mix, making 4 round pans (I only needed 3 for the cake). Three batches of chocolate buttercream icing just to be safe (I had lots left over, so probably 2 would do).

I used 2 of the rounds with icing in middle for the base (I cut the center bump off to make it flat). Then I cut pieces from the 3rd round and piled them on the base with lots of icing to form the mountain side.

It seems hard but its quite easy since there’s no real right way to do it. Once I had the shape, I covered it all in lots of icing, then decorated with chocolate rocks and plastic shrubs/trees. I used thin black licorice for the train track and grey sugar crystals for the gravel along the tracks.

I put the small train set in place, chugging up the mountain side. A few little plastic signs along the way with a Happy Birthday on top.

I finished it off by writing Happy Birthday on the side. It was a HUGE hit.
