Pink and Green Flower Dream Cake

I made this yummy pink and lime green fondant cake for my two year old. It was my first time working with fondant but I really enjoyed it. I started out with boiling  1. 1/2 cups of mini marshmallows in a pot, then I added 3 tsp of water and 2 tsp of almond extract. It came to complete boil on medium flame. I placed the mixture in a bowl and added 2.1/2 cups of stiffed confectioners power or icing sugar, both names means the same-thing. I placed it in my mixer on a slow pin, slowly as the paste started to thicken it was removed to the kneading pin.

I oiled my hands with vegetable oil, yes, that works just as good as shortening. You can even add a drop of extract to your hand with the oil, it helps to work in the taste to the fondant. I placed the fondant on an oiled, cut-broad with icing sugar and I kneaded  it by hand till it was hard and firm, then I colored it into two parts. I made one half pink, and the next part lime green with food coloring, then wrapped the fondant in wrapping paper.

I made two yellow cake mixes, which gave me a total of four cakes. I added a drop of green food coloring to one of the cake batters, then placed the cakes in the fridge. Then I started on my Swiss butter-cream frosting. I placed 7 egg white, almond extract and 1. 1/2 cups of white sugar in a double boiler on medium heat then I whipped it until the sugar melted completely.  I placed it all in my cake mixer on a whipping, when it was light and fluffy I added 2 cups of shortening and 1 cup of butter, and made a simple syrup out of sugar and water, and covered the cakes.

Then made pink and yellow icing to be the filling.  I gave my three layer cake a crumb coat and placed it in the fridge. Oiled cub-broad again with the same items listed above and rolled out my fondant in a round sharp. I re covered the cakes with a final coat of Swiss butter cream icing, and added my pink fondant to the cake. I smoothed the top of the fondant with my hand to remove any bubbles, then continued this motion until the fondant was dressed like a skirt.

I cut the sides with a pizza cutter. Then rolled out the lime green fondant into a sharp of a belt, and wrapped it around the cake. Then took white, pink and lime green fondant and made flowers and circles, wrote happy birthday and my daughter’s name with icing.. Added pretty stars to the name and there you have. She loved it, we gave her a pre birthday party, her real birthday is on the 26th of Nov.
