Cool Homemade Princess Barbie Cake

This birthday cake was a challenge for me, as I don’t often bake and I am definitely not a ‘cake decorator’! I wanted to do this princess cake for my daughter’s 3rd birthday party, as it was princess themed and she truly wanted a princess Barbie cake! So, here I was, searching through this website trying to find others like me who are amateurs, but are willing to try to be creative!

I borrowed a Wilton dome pan from a friend but realized she was missing the metal dowel that screwed into the base to help with even baking. I went ahead and baked 1 1/2 cake mixes in the dome pan and an additional 1/2 cake mix in an 8 inch round to add height to the skirt for Barbie’s legs. The dome pan cake took over twice the time to cook and I was sure it was burnt. When I took it out, however, the outside was brown, but the inside seemed OK! (and tasted great as I found out later…more like heavy and moist pound cake). I baked the 2 cakes the night before and stacked them on each other and let them cool in the fridge. In the morning I cut a small hole in the middle and put Barbie inside (wrapped in plastic wrap). Everything was great until I started decorating and the cake started to split in two on both sides! I decided to fill the splits with frosting and put her in the fridge to harden like a sort of glue. It worked! I finished frosting with a star tip and then accented with purple star tips and white candy stars and then dusted with white fondant dust to add shimmer that matched her top.

All in all, I was very proud of my cake and the guests seemed to be amazed that I did it myself. I truly thank all of the people that have submitted pictures and suggestions as they helped me through this process and gave me hope (cheesy, I know!)

  1. I been making lots of cakes myself and this one was one of my biggest challenges. I was not aware at the time that you don’t use a Barbie. You use a half Barbie that you buy at a craft store. I cant tell you how man different cakes I baked trying to get the darn doll to fit. I ended up folding the legs then sticking her in feet first and then turning her straight up when I got to the knee. Her feet made the side split a little because they started popping out the side! Let me tell you , you did a great job on this! She is very pretty!
