Carina's cupcakes

The 8 year old I was making birthday cupcakes for asked for chocolate cake and chocolate frosting with sprinkles!! So,I baked the cupcakes, frosted them with chocoate frosting using a large tip to swirl around the top. Then I added the sprinkles. To add a little something extra, I colored fondant in some bright colors and cut out flowers with a fondant cutter to stick on the side of the cupcakes. I cut smaller flowers out, then wet them with a little water and a paintbrush to adhere them to the larger flowers. After the fondant dried, I placed them on the sides of the cupcakes with frosting. Then I piped in green leaves on the edges. I just wanted to come up with something a little different than chocolate frosting with the sprinkles on top and I think the girls were happy with the results. I just used a devils food cake mix and found a chocolate frosting recipe that was really delicious (see below). It wasn't too chocolatey, not too overwhelming with the chocolate cake.
Chocolate Butter Frosting

•1/2 cup soft butter
•1 pound sifted confectioners' sugar (about 4 1/4 cups sifted, 3 3/4 cups unsifted)
•dash salt
•1 teaspoon vanilla extract
•3 squares melted unsweetened chocolate
•3 tablespoons heavy cream or half-and-half (more or less)
Cream soft butter; gradually add sifted confectioners' sugar. Add dash of salt, vanilla extract, melted chocolate, and about 3 tablespoons of cream. Beat until smooth and spreading consistency, adding more cream if necessary.

Chocolate Fudge Heart Cake

HEART SHAPED CHOCOLATE FUDGE TEMPTATION

HEART SHAPED CHOCOLATE FUDGE TEMPTATION

This heart shaped chocolate fudge cake was prepared by me last week for my mother's big 50th birthday. It had to be something special so I innovated this heart shaped cake for her......

An ordinary round/square or bundt shaped cake would not have fulfilled the desired effect of a loving an affectionate birthday cake so I opted for the most expressive of all shapes.....the heart!

I prepared a chocolate fudge cake in a medium sized heart pan. Once the cake was out of the oven, it was very easy to give it a more defined heart shape by first spreading evenly over the top of the cake, a layer of home prepared milk chocolate frosting and then decorating the cake with red & white coloured chocolate chips in the shape of hearts. And ofcourse, nothing would have expressed my love and affection more than RED chocolate chips so i designed the cake to highlight the red chips.

The chocolate chip heart shaped decoration, although was fairly straightforward, required alot of concentration, patience and symmetry throughout the decoration as I formed layers of hearts in red and white and finally placed it on a complimenting red board.

These cakes are amazing!!!
by: Kashif Masud

These cakes are absolutely beautiful and so well crafted. They deserve to be displayed on a website. The choice of colors and the delicate placing of the chocolate chips on the cakes makes the desserts a real feast for the eyes. They look extremely appetizing and who would ever say no to chocolate? :-) A real delight for the senses. A delight to look at, a delight to smell, and a delight to taste. (YUMM). Hats off to the baker (Mehrunisa).

Homemade first birthday jungle cake

by Sian
(callington cornwall england)

I made this cake for my daughter's cousins first birthday. Although it doesnt look it its so easy to make and suitable for various ages and both boys and girls.
The cake itself is a simple chocolate sponge (two layers) filled and covered with chocolate buttercream. All the decoration is made from fondent icing (sugar paste) this was all handmade and coloured with only natural colorants. The most time consuming part was the individual leaves covering the top as there were so many i have tried larger ones sinces yet they dont have the same effect.
I received a great reception for this cake and have made more since as it is unlike any u can purchase from the shops.
All of the decorations are made by hand and do not need any specialist decoration tools to do so.
All in all i recommend this to anyone of any ability as it was my first time using fondant icing and it turned out so well.
