Popcorn Cake

My daughter Olivia and I planned a movie-themed party for her 11th birthday celebration. For her cake, I baked 2 Duncan Hines white cake mixes, each in a 9×13 pan. After cooling, I frosted each layer with Duncan Hines Whipped Frosting, in white buttercream. I then stacked the layers, and used strawberry fruit rollups for the red stripes of the popcorn box. I had on hand some paper popcorn bags, from which I cut the word POPCORN and placed in the center of the cake. I then popped a couple of bags of microwave popcorn, let cool, and added to a mixture of butter/minimarshmallows (like what you use to make rice krispie treats, only substitute popcorn for the rice krispies). Place cooled popcorn mixture around top/sides of cake. The kids really enjoyed the cake; one little girl said it was the “coolest birthday cake she had ever seen!” This was a fun and easy cake to make.
