Cool Homemade Polar Express Train Cake

This train cake was made for my sons 3’rd birthday. He is gaga over trains right now, but not Thomas, he likes the train from the Polar Express.

After looking at this site and reading recommendations, and realizing that I was outta time, I decided to go with pound cake which I cut into pieces to make the train shapes. I wanted the cars to be large, like one of his electric toy trains. I originally wanted to do a car for each child, but they would have needed to be much smaller, and anyway I liked the idea of filling the cars with candy. We used the “professional” food coloring found at Hobby Lobby, the colors seem, brighter.

For the tracks, I used black licorice and those cream/brown wafer cookies for the struts. I put malt balls in the first car, and dolly Madison chocolate cakes in the back car.

For the mountain, I baked a chocolate cake in a measuring bowl, but it didn’t rise enough to stand alone, so I placed it on top of another plastic bowl and covered it all with icing (you couldn’t tell until I cut into the cake).
