Coolest Hello Kitty Birthday Cake

This Hello Kitty Birthday Cake is a basic vanilla sponge made in a 20cm round tin, which I froze on the day of baking. I printed a Hello Kitty template and mounted it onto thin cardboard and cut out.

When I was ready to decorate, I took the cake out of the freezer and after about an hour, I placed the template on top, securing using toothpicks. I used a sharp knife to cut around the template. I then covered the cake in a crumb coat, using powdered sugar and butter, and popped the cake in the fridge for an hour or so, whilst making the frosting.

The frosting was an easy recipe – 500g butter / 2.5 large cups powdered sugar, 1 teaspoon vanilla essence, 3 x tablespoons extra thick double cream, 3 tablespoons marshmallow fluff.

I then cut out the bow from the template and placed it back on the cake securing with toothpicks. I used a Wilton star tip #18 to pipe the white icing, starting at the sides and working round the cake, row by row.

The eyes are just black fondant icing, the nose is the biggest orange pretzel M&M I could find, and the whiskers are black liquorice which I had to hunt down in a specialist sweet shop.

I then removed the bow paper template and using the same star tip, iced the bow – the frosting was colored red using coloring paste. The black outline on the bow was again colored with coloring paste and piped using a writing nozzle.

The cake was a huge success for my 7 year old niece!
