Coolest Hello Kitty Birthday Cake Idea

I made two 10″ circle Victoria sponges for this Homemade Hello Kitty Birthday Cake Idea and coloured the mixture so it was dark pink. I sandwiched the two sponges together with strawberry jam and butter icing. I then placed the sponge onto a 10″ cake board.

I had printed off a picture of a Hello Kitty head which I used as a template to cut the cake into shape. Once the head was shaped I rolled out a pack of readymade fondant icing (Tesco’s). I added a thin layer of strawberry jam to the top of the sponge before placing the fondant over the top of the cake. I then cut around the overhang leaving 1/2 inch to ‘tuck in’ the icing at the edge of the cake.

For the bow, eyes, whiskers and nose I simply mixed some liquid food colouring with the cut offs of the fondant and shaped them and positioned them like on the template. I also used some cookie cutters to make my daughter’s name and place it at the front of the cake board.

This cake was really simple to make for someone with very limited baking skills, tasted delicious and my daughter loved it.
