Coolest Birthday Barbie Cake

I have always had an interest in cake decorating. I never really did it until my youngest daughter’s birthday last November. Even then, it was just something simple.

This is just a round cake that I frosted, and put stars around the top and bottom. I used the candy letters to spell out happy birthday. All of the guests liked it, and thought it had been professionally made. This year for my oldest daughter’s birthday, she wanted a Barbie theme. I wanted to surprise her with a 3D Birthday Barbie Cake, but I figured I should practice first, and she was always around. So, she knows what she will be getting.

Hopefully it will be nicer when I make it the second time. I think it came out good for a practice-run. I really wish I had followed the directions for the buttercream frosting, though, because it was starting to drip towards the end. I had already put it in the fridge a couple of times to prevent it from doing so. The directions did say to add a little extra milk, and I accidentally put a little TOO much in.

I had to use two regular cake mixes, and about a pound of fondant-give or take a little. This was my first time using it. It actually sort of dried out, but you live you learn, right? There is buttercream and royal icing mix that you can buy from the store, or you can make your own. Just Google a recipe. It is a lot of work, but definitely worth it!
