Coolest Ice Cream Sundae Cake

I wanted to do something fun for my husband’s birthday cake, and when my kids saw this cake on a blog (alanabread.com), we had to give it a try.

This ice cream sundae cake is 4 layers, 2 each of vanilla and chocolate. I iced it in vanilla buttercream tinted yellow. Then, I made the ganache to look like the chocolate syrup. The ingredients for the ganache were…

  • 8 oz semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup corn syrup

When the ganache was cool enough, but not cold (because it will harden) I poured it over the cake. I then added a bunch of sprinkles (or jimmies as those of us from Philly call them).

Next, I made a ridiculous amount of buttercream. I think it was 6 sticks of butter worth! I left some plain vanilla white, tinted some pink by adding some strawberry syrup to it, and then added cocoa powder to the last batch for chocolate. I froze it all in air tight containers.

Finally, I scooped buttercream to look like ice cream and arranged it on top of the cake. I reheated the chocolate ganache in the microwave briefly so it loosened up again and poured over the “ice cream” scoops easily. (Important: Wait till it is not too hot.) I then topped it with more sprinkles and that’s it!

Was a huge cake! It took quite a while to eat it all!
