Coolest Mickey Mouse Ears Birthday Cake

I made this Mickey Mouse Ears Birthday Cake for my niece Lexie’s first birthday. She already loves Mickey Mouse Clubhouse, so I wanted to make a Mickey cake. However I wanted a modern original idea.

So, first I made a Funfetti sheet cake. As it cooled I cut three circles onto paper, placed them on the cake and cut them out using a knife. Next, I placed them on a platter so that they would resemble Mickey’s head and “glued” them together with small blobs of frosting. I frosted the bottom half so that it would look like the famous mouse’s red shorts.

I frosted the top portion and ears black. For both frosting colors I used vanilla frosting which I dyed with cake frosting food coloring from the local craft store. (Make sure to buy food coloring for frosting as regular food coloring will come out pink or gray!)

I let the cake sit for a little while before I used a piping bag to add “buttons” to the shorts and Lexie’s name on the Mickey Ears. This makes it easier to remove frosting in case you make mistakes (which I did!). I made small lines under her name to resemble stitches. I wanted this cake to be an offbeat, modern interpretation of Mickey Ears and his shorts.

Finally I dyed shredded coconut green to place around the cake so it looked like grass. Everyone loved it and Lexie had a great time digging into her first cake! When trying to make a character cake, think outside the box! Hope this inspires you to get creative!
