Homemade 75th Birthday Cake

This is the first cake I have ever made using fondant icing for an Italian lady who belongs to a neighborhood group. The actual cake was a moist sponge cake – just a basic creamed sponge made with eggs, self raising flour, baking powder, butter, caster sugar and vanilla and a few drops of Rose Water and a little milk. I split the sponge into a sandwich and for the filling, I used butter icing which contained crushed amaretto, a little instant coffee, melted dark chocolate, almond essence and Grappa. All these flavours were intentionally put in to give a really subtle Italian flavour.

The fondant icing was harder to do as I had never done it and the covering wasn’t so bad but doing the flower and leaves was tricky because it softened so easily and kept breaking or sticking to the marble slab I was using. In the end, I just cut it from a stencil and let it harden a little. I used home made strawberry jam to make sure the white fondant stuck to the sponge.

The rest was pre-made sugar flowers and silver beads and an ivory ribbon.

I am a photographer which is why my picture is on a black background but this is not a shop bought cake. I am just very pleased at how it turned out.

The lady I made the cake for said she really enjoyed it and I have attached a picture of her blowing out her candle.
